May King Bradley Home Economics Cookbook, 1911

The May King Bradley Home Economics Cookbook, held by the Archives of Appalachia at East Tennessee State University, consists of recipes, tables for conversions of measuring, analyses of food and condiments, and a complete set of manners and rules to be employed at a formal dinner. It includes proper table settings and gives an in-depth look at the art of cooking from scratch. The front matter of the bound volume reads: "Mae King Bradley was one of the four women students enrolled at East Tennessee State Normal School during its first year of operation. This is a fascimile of a cookbook prepared by Mrs. Bradley for her home economics class. Before a recipe could be accepted for the cookbook, the student had to prepare and serve the dish to the schools faculty for their approval."

The current digital collection includes a surrogate of the original manuscript cookbook.
